“Pedaforno” Arneis – Cascina Fornace
Vinification: An unconventional, naturally crafted ‘skin-contact white’ or orange wine, Arneis vinified pure, in a natural programme: spontaneous fermentation with indigenous yeasts and seven days of skin contact, cap submerged in cement vats. The result is a structured white, with expressive terroir and intense aromatics. Details: Maceration about a week on skins, no selected yeasts, cement vessels for fermentation and maturation, yielding greater grip and complexity than classic whites.
Tasting note: Unconventional and natural, this wine is defined by skin-contact maceration. Its appearance is golden yellow with orange hues, sometimes cloudy from minimal filtration. Aromas are expressive: ripe peach, white flowers, dried fruits, and a distinct salty, mineral lift. On the palate it is full-bodied, structured, and austere, bone-dry, yet carried by a refined salty texture that lightens the body and yields a long, persistent finish.
