Vinification: With a production of 17,000 bottles, this wine captures the essence of its terroir. Sourced from 30-year-old vines in ancient argilo-calcareous soils between the Rhône and the Cévennes, it thrives in a Mediterranean climate. A blend of 50% Sauvignon Blanc and 50% Viognier, it undergoes fermentation with indigenous yeasts, lasting 40 days in stainless steel. Unfined and unfiltered, it may develop a slight natural deposit, and is aged for six months in stainless steel, enhancing its vibrant character.
Tasting note: This skin-contact white, is macerated on the skins to achieve a vibrant hue and a rich, complex personality. The nose reveals a tapestry of dried fruit, herbal nuances, and gentle spice. Despite its full-bodied character and firm structure, it maintains a lightness with bright acidity, culminating in a long, dry, and aromatic finish that showcases its beautiful complexity.
