Pinot Grigio “Salvadi”- Doc Friuli Grave – Scarbolo
Vinification: After destemming and crushing, the grapes were placed in open tonneaux for maceration, where alcoholic fermentation occurred with indigenous and native yeasts from a pied de cuve prepared in the vineyard. This controlled process allowed for optimal extraction through gentle punching down. Following over two weeks of skin contact, the grapes were racked and pressed, completing their malolactic fermentation naturally. The Salvadi wine matured for 12 months in fermentation barrels on the fine lees, enhancing its depth. After careful assembly in a steel tank and a brief decantation, it was bottle-aged for four months before release, showcasing our dedication to excellence in every sip.
Tasting note: A pale straw colour, with aromas of ripe pear, green apple, and subtle floral notes. The palate is crisp and elegant, featuring vibrant acidity and a creamy mouthfeel. Flavors of peach and apricot mingle with mineral undertones, reflecting the vineyard’s unique soils. The finish is clean and lingering, with a hint of almond and grassy freshness.
