Corvina Vento Igt Senza Solfiti – La Cappuccina
Vinification: It begins with the careful harvest of grapes in September, optimally ripe for phenolic maturity. After pressing and destemming, the grapes undergo a fifteen-day fermentation and maceration process, utilizing traditional punch-down techniques and temperature control for flavour extraction. Following this, malolactic fermentation softens the acidity, and the wine matures in large oak barrels for five months. Finally, it is naturally clarified and bottled without oxygen exposure, preserving its vibrant character and complex aromas.
Tasting Note: A vibrant red colour with violet reflections wine. It exudes fruity jam notes on the nose and offers a dry, well-balanced palate with noble tannins and a subtly herbaceous finish. Enjoyed young, this wine pairs beautifully with pasta and red meats. It showcases hints of sour cherries, strawberries, and earthy aromas, while its low sulphite content enhances its lightness and digestibility.
