Merlot Igt Venezia Giulia – Paraschos

Vinification: In 2004, Merlot debuted with grapes planted in 2001 at Sant’Andrea, sourced from old vines over eighty years old. This 100% Merlot vineyard has an average vine age of 15 years. The wine undergoes 28 days of fermentation in oak vats without added yeasts, followed by at least 24 months of maturation in Slavonian and French oak barrels. Bottling occurs by gravity, ensuring purity without the addition of sulphur dioxide or filtration.

Tasting note: A deep ruby colour with aromas of dark fruits, chocolate, and a hint of spice. On the palate, it is full-bodied with velvety tannins and lively acidity, showcasing flavours of ripe blackberries and vanilla. The long finish features lingering notes of dark chocolate, balancing elegance and depth.
