Mornico Pinot Nero Riserva Oltrepo’ Pavese Dop – Ca’ di Frara
Vinification: 100% Pinot Nero from Oltrepò Pavese D.O.P. thrives in clay-laden, limestone soils. The grapes undergo red vinification with submerged cap maceration, followed by fermentation in stainless steel at a controlled 22-27°C for 15 days. Aged for 12 months in barriques and another 12 months in bottle, it offers depth and character, showcasing the elegance of this noble variety. The harvest typically occurs in the second week of September, ensuring optimal ripeness.
Tasting note: A ruby-red wine entices with its intense bouquet of elegant red berry notes, harmoniously complemented by hints of subtle spices. On the palate, it reveals a delightful freshness, enveloping the senses with its soft, velvety tannins. The finish is both persistent and clean, leaving a lasting impression of refinement and balance.
