Nero D’avola Sicilia Doc – Dei Respiri Baglio Oro
Vinification: After a meticulous hand-harvesting process during the day’s cooler hours, the grapes are destemmed and sorted for quality. They then undergo temperature-controlled maceration for 18-25 days, where fermentation begins, extracting the wine’s vibrant colour and flavours. After racking, the wine is aged primarily in stainless steel vats, artfully maintaining the grapes’ unique essence, before undergoing a final maturation in the bottle for a minimum of two months before it is thoughtfully released to be enjoyed.
Tasting Notes: Displaying a deep ruby hue, this full-bodied wine captivates with its vibrant nose, showcasing aromas of ripe blackberries, cherries, and plums, enriched with hints of black pepper and leather. On the palate, it offers luscious dark fruit and a pleasing texture, culminating in a long finish that pairs beautifully with hearty dishes, making it an exquisite choice for various occasions.
