Pinot “Noir” Igt Venezia Giulia – Paraschos

Vinification: Since 2005, a small vineyard of Pinot Noir has flourished on a unique blue marl deposit. The 25-year-old vines yield exceptional grapes, which undergo natural fermentation in oak casks, with no forced cooling or added yeasts. Following fermentation, the wine matures for 24 months in 500-litre barrels, enhancing its complexity. Bottling is carried out by gravity, preserving the wine’s authenticity without the addition of sulphur dioxide or filtration.

Tasting note: A beautiful bouquet of red berries, cherries, and hints of violet. On the palate, it showcases elegant tannins and vibrant acidity, with layers of spice and earthy undertones. The long finish reveals nuances of oak and a refined freshness, making it a well-balanced and complex expression of Pinot Noir.
