Rosso Doc Collio Goriziano – Draga
Vinification: The vineyard features 14-year-old Cabernet Sauvignon and 32-year-old Merlot vines, pruned using the Guyot method for optimal growth. Grapes are hand-harvested in early October 2015, ensuring only the best fruit is selected. Sustainability is key, with no herbicides used. In the cellar, grapes undergo 30 days of skin maceration in oak tanks, followed by pressing and aging in French barriques for two years, maintaining contact with the lees for added complexity. The wine is neither filtered nor clarified, preserving its natural essence.
Tasting note: A beautiful garnet red hue and an expansive, complex bouquet, revealing notes of forest fruits, cherry jam, raspberry, chocolate, and a subtle hint of vanilla. On the palate, it is impressively persistent, showcasing a mineral quality alongside robust tannins and harmonious balance. This wine demonstrates significant ageing potential, promising evolution over time.
