“Stadera” Sussumaniello Salento Igt – Campi Deantera
Vinification: 100% Susumaniello unfolds with temperature-controlled extraction and six months’ maturation in French and American oak, smoothing the grape’s robust tannins while granting spicy, balsamic complexity. Harvested by hand in late September, the 100% Susumaniello fruit undergoes thermo-controlled maceration and around ten days of alcoholic fermentation, aided by ten selected yeasts. The coastal Sava terroir, shallow, permeable sandy loam with rocky skeleton, 100 metres above sea level, under fierce Adriatic sun shapes a bold, refined profile.
Tasting note: A rich, intense Italian red, it unfolds with a floral and fruity bouquet, delicate balsamic undertones and a robust, tightly woven tannic structure that lends itself to barrel aging. In the glass, its bright, deep ruby colour promises depth; the nose offers red and black fruits with floral lift and a subtle spicy finish. The palate is full-bodied, elegant, with balanced acidity and a long, lingering finish.
