“Valdovato” Roero Docg – Cascina Fornace
Vinification: An artisanal Nebbiolo crafted by natural process, spontaneous fermentation with indigenous yeasts in concrete vats, and around twelve days’ skin contact with a submerged cap, followed by aging that mirrors the vineyard’s rhythms, yielding a prudent, classical wine. Vessel: concrete tanks; maceration: about 12 days on the skins with a submerged cap; artisanal, with minimal intervention to honour Santo Stefano Roero’s terroir.
Tasting note: An intense, artisanal (100%) from steep, sandy soils, its garnet-red hue hints at depth. Aromas of red fruit, plums, cassis, with licorice, balsamic notes and forest floor. On the palate it’s dry, structured and linear, yet dynamic, with high acidity and refined tannins, delivering red fruits, dried plum and licorice. The finish is long, harmonious and savoury.
