Valpolicella Superiore Doc – Roccolo Grassi
Vinification: This wine is sourced from a 12-hectare vineyard in a prime south-east location, benefiting from optimal sunlight. The vines are cultivated using the Guyot system, with 7,500 plants per hectare, on volcanic and basaltic soil at an altitude of 200 to 250 metres. Harvest occurs at the end of September when the grapes are perfectly ripe, with 25% dried to enhance their characteristics. Fermentation takes place in stainless steel tanks at 25-26°C, with daily pump-overs, while malolactic fermentation occurs naturally in wood. The wine matures for 20 months in 225-litre French oak barrels and 20-hectolitre vats, followed by 24 months in bottle, resulting in remarkable depth and elegance.
Tasting note:A deep ruby-red colour. On the nose, it reveals an enticing bouquet of ripe dark cherries, plums, and blackberries, complemented by hints of violets and spices. On the palate, the wine is full-bodied and well-structured, with vibrant acidity and smooth, integrated tannins. Flavours of dark fruit, tobacco, and subtle earthy notes create complexity. The finish is long and elegant.
