“Visca’ ” Nebbiolo – Cascina Fornace
Vinification: A natural, unfiltered Nebbiolo from Roero, made with spontaneous fermentation by indigenous yeasts, without temperature control, and follows a minimalist, biologically informed approach. Grown in organic farming with no herbicides or synthetic inputs, it matures first in steel and then in glass, preserving its freshness and varietal character. Bottled with only trace amounts of sulfur, the result is a light, frank, immediate expression of Nebbiolo.
Tasting note: This wine offers a light, fresh, spritzy expression of the grape. Appearance is bright ruby with faint garnet. The nose is intensely fruity, with red cherry, black raspberry and blackberry, plus underbrush, violet and hints of balsamic. On the palate it is juicy and creamy, despite its light body, with high acidity and a slightly bitter finish. Tannins are fine and smooth, delivering a long, subtly earthy finish.
