“Eroico” Sicilia Doc – Nero d’Avola – Biologica Stellino
Vinification: An organic Nero d’Avola from Monreale, Sicily, grown on clay soils that yield small, tannic, richly coloured bunches. Meticulous selection begins in the vineyard, with manual harvest followed by spontaneous fermentation on the skins. The wine is vinified and aged in stainless steel: about 10/12 days of fermentation with daily remontage and punch-downs, a spontaneous malolactic, then 9 months in tank and a further 6 months in bottle. 1 hectare, 170 m, 19 years, 4000 vines.
Tasting note: The wine opens with fragrant, elegant aromas of raspberry gelato, black olive pulp, wild herbs, and dry liquorice. On tasting, it is delicate and fresh at first, building into a more powerful, structured palate with silky tannins and bright acidity, inviting even in warm conditions. The finish lingers harmoniously, with a mineral undertone and a gentle hint of heat.
