“Arcane” Vin de France – Chenin Blanc – Fossa Sicca / Fosse Sèche
Vinification:The vineyard speaks of eight centuries of devotion: Benedictine monks first planted the vines, leaving relics from different ages, like a medieval wine tank, a 16th‑century wall, a chapel and a dovecote. This 100% Chenin Blanc is grown on flint, gravel and clay soils at the Plateau de Brossay’s edge, in a breezy, limestone‑less terroir. Organic and biodynamic, harvest is hand‑picked, fermentation native, and aging gentle, expressive, and age‑worthy.
Tasting note: Renowned for its intense purity, high acidity, and aromatic complexity, this wine mingles honey, quince, lime blossom, and pear with a distinct flinty mineral edge and a creamy, fleshy texture. Pale yellow-gold in appearance, its nose offers white flowers, while the palate is fresh, precise, and structured, balancing ripe pear and yellow plum with pronounced mineral salinity. A dry, lees-aged, long, mineral-driven finish.
