“Aria Frisca” PetNat Sicilia Igp – Cattarrato – Biologica Stellino

Vinification: In the Sirignano estate, Sicily, among Catarratto varieties, the Bianco Comune is grown. A hillside 1-hectare vine-yard, 18-year-old, with 3700 plants, trained Guyot, NE exposure at 150 m above sea level. It originates from 100% Catarratto Bianco, grown biologically, with mixed sandy soils. Manual harvest, spontaneous fermentation in steel for 12 days, lees removal, batonage for three months, then a further two months before bottling to capture slight effervescence. The wine expresses the terroir authentically, naturally, with delicate bubbles via the ancestral method.

Tasting note: A pale straw colour with gentle effervescence greets the eye. On the nose it offers fresh, fragrant citrus, white flowers and subtle herbaceous hints, with a faint saline thread recalling Sicily and sharpening its character. On the palate it is slender and easy, vibrant acidity keeping it lively and thirst-quenching, finishing clean, mineral and refreshing. A light, sparkling Sicilian Catarratto with citrus, green apple notes and a hint of yeastiness.
