“Calderara Sottana” Etna Doc – Nerello – Ayunta
Vinification: From a field blend grown on Calderara Sottana’s steep, rocky north slopes of Mount Etna, this wine hails from the oldest soils where viticulture is possible. Intense warmth from dark volcanic soil yields remarkable structure. Ancient vines, massal selections, and hand-working define it. Fermented in open vats with indigenous yeasts for 21 days, then aged 24 months in chestnut ovals and neutral French oak. Limited to 2,000 bottles, with minimal sulfur, chiefly Nerello Mascalese and Nerello Cappuccio.
Tasting note: Renowned for an intense mineral core and elegant structure, it presents dusty cherry, wild berries and sour plum, with dried rose, violet and hints of oregano and fennel. Subtle undercurrents reveal blood orange, iron and smoky flint. The palate is taut and nervy, with bright acidity, cranberry and raspberry, savoury liqueur notes, and fine chalky tannins, finishing long, silky and saline with earthy leather echoes.
