““Eolithe” Vin de France – Chenin Blanc – Fossa Sicca / Fosse Sèche

Vinification: A biodynamic Loire red, chiefly Cabernet Franc (99%) with a trace of Cabernet Sauvignon (1%). From the silex-gravel, clay soils of the Brossay plateau, it thrives on a cool, breezy site with no chemicals. Hand-harvested, native yeasts, natural fermentation in egg-shaped concrete tanks, and extended lees ageing (about 14/27 months) give a mineral, refined expression, evolving with each vintage into a richly complex, delicately poised wine.

Tasting note: Round and silky, it reveals undergrowth and red fruit with graceful balance. A dark cherry hue and an aromatic nose of blueberries, tobacco and graphite. Medium-bodied, fresh yet concentrated, offering ripe cherry and blackberry on the palate, with silky tannins, delicate acidity and a long finish. Fresh violets, licorice and perfectly ripe cherries, cranberries, currants and blackberries; pure, silky juice.
