“Gondwana” Vin de France – Cabernet Sauvignon – Fossa Sicca / Fosse Sèche
Vinification: A 100% Cabernet Franc cuvée with satin tannins, drawn from vines around sixty years old in a north–south Loire site. A luminous expression of perfectly ripened fruit, fermented at low temperature in stainless steel and aged in stainless and egg-shaped concrete tanks. The 2020 Loire vintage was exceptional. Biodynamic, with 60+ year old vines on flinty soils, hand-harvested, under 10 days maceration, native yeast, and 14 months on lees. Naturally vinified.
Tasting note: This wine presents a deep ruby hue and a aromatically complex nose of blackberry, black cherry with hints of red cherry, violet and graphite. On the palate it is juicy, rich and elegant, delivering cassis, blackberry and graphite, with toasty oak and almond nuances. It shows good concentration, balanced acidity, and ripe tannins, finishing long; the bouquet fuses red fruits, plum, violet and liquorice, with a supple, structured mouthfeel.
