“Laurasie” Vin de France – Chenin Blanc – Fossa Sicca / Fosse Sèche
Vinification: From Loire Valley, this Vin de France is produced from roughly fifteen year old vines planted on flint gravels with a slightly clayey earth, under an oceanic, temperate climate that fosters slow, even ripening. Fermentation and maturation occur in stainless steel, with 14 months on fine lees in egg‑shaped concrete tanks. A pure Cabernet Sauvignon profile, vinified with short cold maceration and minimal oak, emphasises mineral tension. The estate is certified organic and biodynamic.
Tasting note: A ripe, dark-fruited nose of blueberry and red cherry gives way to a juicy, rich palate with cassis, blackberry and red cherry. It shows ripe tannins, good structure and medium-plus acidity, delivering a long finish. Aromas oscillate between red fruit, animalic and green notes, cocoa and old leather, with a sweaty edge; the palate adds green herbaceous hints, yielding a medium-bodied wine with balanced tannins and persistent acidity.
