“Libero” Costa Toscana Igt – Ciliegio – Fuori Mondo
Vinification: A red wine built on 100% Ciliegiolo, grown at the Volpaiole vineyard and crafted with a natural, low-intervention approach. Fermentation occurs in cement tanks to preserve freshness, followed by ageing in small sandstone amphorae that allow delicate micro-oxygenation without imparting oak. Gentle, fruit-focused and terroir-driven, with minimal sulphites. Vinification details: hand-harvested grapes; 6 days of maceration; 24 months in grès amphorae; 12 months in cement.
Tasting note: A vibrant Tuscan red, usually 100% Ciliegiolo, biodynamic and fruit-forward, with high acidity and refined tannins. Dark ruby with purple highlights; nose of red berries, cherries, violets, licorice, and Mediterranean herbs. On the palate: light-to-medium bodied, bright red fruit, savoury notes, and finely integrated tannins; cherry-fresh acidity and a long, dry finish.
