“Navigabile” Etna Doc – Ayunta
Vinification: An artisanal Etna red born of a field blend led by Nerello Mascalese, Nerello Cappuccio and Alicante, harvested in late October on the northern slopes near Randazzo. Wild‑yeast fermentation in open vats, with 12–18 days of skin contact, is followed by 12–14 months in large chestnut (or cherry) casks. Chestnut ageing amplifies depth while preserving the variety’s character. Alcohol about 13.5%, production around 4/5,000 bottles. A travel‑ready, aromatic wine that speaks of Etna’s terroir.
Tasting note: An elegant Nerello Mascalese, glows pale ruby with pronounced volcanic minerality. Its nose mingles red cherry, violets, tobacco and flint, while the palate remains delicate, savoury, and refreshingly balanced, with black cherry, raspberry and earthy undertones. Fine, dense tannins yield a long finish, complemented by moderate acidity and a light-to-medium body. A refined, complex wine with pervasive mineral and earthy echoes.
