“Piante Sparse” Etna Doc – Ayunta
Vinification: A unique, limited-production white from the northern slopes of Mount Etna, Sicily, crafted by Filippo Mangione. The blend of Carricante, Catarratto, Minnella Bianca, Grecanico, Zibibbo, and Muscatedda, comes from white vines historically grown among older red vineyards. Vines are individually harvested; grapes macerate on their skins for three days, then age at least a year on the lees. Expect acidity, freshness, and a robust mineral body, with a poised complexity born of a remarkable ampelographic patrimony.
Tasting note: An intensely mineral, high-acid Etna Bianco, chiefly Carricante, celebrated for citrus brightness and white-flower perfume. It carries a saline, savory edge with hints of tropical fruit or chamomile. The palate presents lemon and grapefruit with ripe stone fruit, sometimes apricot or acacia honey, all riding a dry, brisk frame. Medium-bodied, it glows light straw with occasional gold reflections, and a lingering, salty finish.
