“Are” Fiano Salento Igt – Campi Deantera
Vinification: Grape variety: 100% Fiano. It is a precisely cool vinification designed to preserve its fresh aromatics and minerality. After destemming, a brief cold maceration extracts delicate aromas from the skins. Gentle pressing follows, with alcoholic fermentation in temperature-controlled stainless steel at about 15°C for around two weeks. The wine then matures on its fine lees in stainless steel for five months, maintaining vibrant fruit definition and minerality without any oak influence.
Tasting note: A crisp southern Italian white, bearing a pale straw-yellow hue. Its bouquet blends delicate white flowers with citrus and hints of Mediterranean scrub. On the palate it is elegant, fresh and mineral, delivering bright tropical notes, passion fruit, lychee, grapefruit, balanced by crisp acidity and a persistent, vibrant finish.
