“Desaja” Arneis – Cascina Fornace
Vinification: Natural and artisanal, produced from 100% Arneis grown on sandy calcareous soils in Santo Stefano Roero. It features a brief maceration on the skins, spontaneous fermentation with indigenous yeasts in cement vessels, and nine months’ maturation in large casks and steel, followed by at least six months’ bottle ageing. The result is a wine of pronounced minerality and notable longevity.
Tasting note: Characterised by a five-day skin maceration, it presents a deeper colour, silkier texture, and a more complex, structured profile than typical Arneis. Appearance: intense straw yellow with luminous highlights. Nose: ripe yellow peach, pear, hawthorn, hay, and exotic fruit. Palate: fresh and crisp, yet silky, with high mineral energy, iodised notes, and orchard fruit; a slightly herbaceous finish. A dry, textured wine with vibrant acidity and a long, savoury finish.
