Chardonnay Aop Côtes de Jura ” Floreale” – Domaine des Ronces
Vinification: Harvested with care in small baskets, the Trousseau à la Dame grapes are hand-destemmed using a wicker destemmer. The fermentation process employs native yeast, with the cap manually punched down every two days to ensure a gentle extraction. Free-run and press juices are skillfully blended and then aged for 12 months in stainless steel tanks. A minimal amount of sulphites is added post-fermentation, and the wine remains unfiltered, capturing the true essence of its Côtes du Jura AOC origins.
Tasting note: Le Trousseau, a ruby-red grape from the Jura, presents intriguing complexities as it ages. Initially characterised by fresh aromas, it evolves to reveal layers of spice, undergrowth, and earthy notes. Renowned for its delicate yet well-structured profile, this varietal can develop further nuances over time, making it a remarkable choice for cellaring, with potential longevity of up to three years.
