Vinification: The manually harvested from the estate thrives in iron-rich, reddish soils, reflecting its striking character. Embracing a minimal intervention philosophy, the wine undergoes wild yeast fermentation in ancient stone presses, with 50% of the whole grape clusters used. Aging for ten months in half-buried amphorae allows for a pure expression of the grape’s essence, free from oak influence, while honouring the complex terroir and tradition of the Jesuit monks who once crafted wine here.
Tasting Note: It captivates with its vibrant cherry hue and enticing aromas of ripe red fruits, particularly cherries and strawberries, intertwined with wild herbs and delicate floral notes. On the palate, it is both crisp and juicy, boasting a surprisingly light yet full-bodied character.
