Merlot Pays d’Oc Igp – Mas de Daumas Gassac

Vinification: A blend of Viognier and Chardonnay, is meticulously crafted from grapes harvested around the Etang de Thau. The process begins with 100% destemming, followed by a gentle maceration of 10-12 hours in refrigerated tanks to extract flavour and aroma. After pressing, the juice ferments under controlled temperatures before maturing for four to five months in stainless steel tanks. This careful vinification highlights the wine’s origins from the unique clay, limestone, and quartzite terroir of the region.

Tasting Note: This wine presents a deep, sultry red hue with enticing aromas of summer berries and a subtle hint of spice. On the palate, it is well-balanced and fruity, offering a smooth, harmonious experience with touches of roasted coffee. The finish is creamy, featuring notes of red fruit jam complemented by a gentle peppery note, showcasing its refined structure.
