“Pagliatura” – Maremma Toscana Doc – Vermentino – Fattoria di Magliano
Vinification: A 100% organic Vermentino from Maremma, Tuscany, whose vines face north-northwest at 150–250 m above sea level. The sea breezes from the Tyrrhenian coast maintain a celebrated day and night temperature swing, perfect for ripening. Grapes undergo cryomaceration and soft pressing, then fermentation in temperature controlled stainless steel at 16/18°C for 15/25 days, betwen 3 and 6 months on fine lees. A further refinement for latest 6 months, harvested mainly in early September.
Tasting Note: Straw-yellow with green-tinged hints at the rim, it opens in bloom with pronounced floral notes and a finish that reveals fruitier, fresher, crisper references. On the palate it is light-bodied and easy-drinking, sustained by a savoury, refreshing mouthfeel and a bright, mineral-driven finish. Aromas mingle white peach, pear and citrus with herbs; the palate stays crisp, savoury, and mineral, with a lively, crunchy acidity.
