Ribolla Gialla Doc Collio – Draga
Vinification: A dry white from San Floriano del Collio. The 25‑year‑old vines, trained Guyot, yield 100% Ribolla Gialla on hillside marne argillose and arenaria called “ponca” at about 220 m. Harvested by hand in September 2023 with berry selection and no herbicides, the grapes are gently crushed, cooled, and macerated briefly, then softly pressed. Fermentation occurs in stainless steel at 16–18°C, followed by roughly seven months on fine lees, before bottling and bottle ageing.
Tasting note: Pale straw-yellow in appearance, it offers a floral, fruity bouquet with white blossoms and notes of apple, peach and citrus. On the palate it is mineral and citrusy, fresh, lively and dry, harmonious with pronounced acidity; a possible sediment is due to natural stabilisation. The wine is dry, round and smooth, multi-layered, fleshy and crisp, finishing with a pleasantly mineral, sandstone-driven aftertaste.
