Ribolla Gialla Igt Venezia Giulia – Paraschos
Vinification: For this wine, only grapes with perfectly ripe tannins are selected from the highest and sunniest rows. After hand-harvesting on the cool mornings of late September and October, the grapes are partially destemmed and left to macerate on their skins in open fermenters until alcoholic fermentation occurs, without forced cooling or the addition of selected yeasts. The wine is then matured in large Slavonian oak barrels (15 – 25 hectolitres) for a minimum of 24 months on its own lees. Bottling is done by gravity, without the addition of sulphites and without filtration.
Tasting note: A pale golden hue and vibrant character. Its enticing bouquet reveals fresh green apple, bright citrus zest, and hints of ripe peach and apricot, intertwined with delicate floral and herbal notes. On the palate, the wine is lively and refreshing, boasting crisp acidity and flavours of juicy citrus and ripe pear, complemented by a touch of savoury minerality. The finish is elegant and persistent, leaving a lasting impression of bright fruit and a hint of salinity. Perfectly balanced.
