Zibibbo Doc Sicilia “Guardiani di Ceppibianchi”- Baglio Oro
Vinification: 100% Zibibbo (Muscat of Alexandria) grapes, harvested in late August. Manual picking with destemming and a prolonged cold maceration on the skins to extract aromas, followed by gentle pressing, thermo-controlled fermentation, and stainless-steel ageing. Ceppibianchi Zibibbo is hand-picked in the third and fourth weeks of August, often in several passes for ripeness; after sorting, cold maceration and soft pressing, then slow, temperature-controlled fermentation and stainless-steel maturation to preserve a fresh, fruity, aromatic profile.
Tasting Notes: A dry Sicilian white of high aromatic intensity. The wine glistens pale straw to clear lemon. On the nose, jasmine, orange blossom and Zagara prevail, with hints of lychee, peach and candied orange peel. The palate is dry, fresh and medium-bodied, buoyed by pronounced minerality and a savoury, salty edge. It finishes long and persistent with floral and mineral notes.
