Pecorino Casabianca – Igt Colli Apruntini – San Lorenzo Winery

The exquisite fusion of native white vines elevates this wine, imparting a delightful character and ensuring remarkable longevity.
Winemaking:
100% Pecorino. This wine undergoes a harvest in the first week of September. The process includes pressing, cryomaceration of the crushed grapes, and soft pressing. The fermentation is carried out in a reduced environment, utilising naturally occurring yeasts, a method known as spontaneous fermentation. This technique contributes to the development of wines with greater complexity. The wine has an ageing potential of 2 to 3 years.
Tasting Notes:
The wine is pale straw-yellow and displays great intensity on the nose. It reveals hints of white flowers, chamomile, anise, wild herbs, and a subtle note of toasted almond. Upon further smelling, fresh fruity nuances emerge, showcasing citrus aromas of pink grapefruit and a mineral quality reminiscent of gravel. On the palate, the wine offers a delightful tactile and gustatory experience. It is fresh, crisp, savoury, and mineral-driven, complemented by elegant citrus notes.
