
La Ginestra is a 100% worker-owned and managed farm located in Tuscany, covering over 130 hectares. The farm produces honey, meat, olive oil, pasta, and wine. The team’s shared goal is to preserve and rejuvenate the traditions of the Italian countryside. The vineyards are situated at an elevation of over 300 meters, and the primary soil type is Albarese, a compact mix of clay and limestone that is common in the area, particularly in Chianti Classico. The farming practices follow Biodynamic methods, which lead to the production of vibrant wines. In the cellar, both stainless steel and amphora are used for fermentation and aging. La Ginestra exclusively utilizes naturally occurring sulfites, ensuring that nothing is added or removed at any stage of the winemaking process. While these wines fit the modern definition of natural wine, they cannot be easily categorized alongside most other “natural” wines.
