“Chiar’Otto” Chiaretto di Bardolino Classico Doc – Villa Calicantus
Vinification:
A distinctive rosé from Bardolino, Chiar’Otto blends seasoning, minerality and elegance into a modern yet timeless expression. It is the first Bardolino rosé fermented and aged in barrels, revealing a generous yet refined palate with body and length. From 55-year-old vines on a moraine hillside near Lake Garda, biodynamically farmed in Pergola Veronese, grapes macerate briefly before native-yeast fermentation and seven months in 225-litre barriques. Minimal intervention yields a juicy, substantial wine. Production: 8300 bottles 0,75lt.
Tasting note: Chiar’otto is a biodynamic, high‑end Bardolino rosé, celebrated for its structure, savoury depth, and age-worthiness. It pours with vibrant wild red berries, strawberry, and citrus, layered with herbal, mineral, and occasionally yeasty or spicy hints. The aroma blooms with red flowers, strawberry and earthy eucalyptus, while the palate remains energetic and crisp, offering sour cherry, blood orange, redcurrant, and subtle cocoa or almond nuances.
