Vin Santo Chianti Classico Docg “Cortine” – Pieve di Campoli

 

Vinsanto has ancient roots, and there are many credited versions of the origin of the name; for us, there is no doubt that the name comes from its use during religious ceremonies.
According to an unbroken tradition, our bottles are still produced using traditional methods and are placed on the market only after meeting the liturgical requirements of the Cathedral Chapter.
This is the Vin Santo of the Cathedral of Florence.

Vinification:  Vin Santo Cortine undergoes a unique vinification process closely tied to its origin. The grapes, sourced exclusively from the historic vineyards of Cortine, primarily include Trebbiano Toscano and Malvasia. Combining these grape varieties and a meticulous drying process results in a wine with a slightly sweeter flavour and a fuller, rounder palate. Harvesting occurs manually at the end of September, with grapes collected in crates. Afterwards, the grapes are dried on racks in temperature-controlled rooms, utilising a natural drying process until the ideal sugar concentration is achieved. Following a gentle pressing, fermentation takes place in stainless steel tanks. The wine is then aged in oak barrels for at least 48 months.

Tasting Notes: Amber yellow in colour, the nose has a complex bouquet with hints of dried fruit, caramel notes, and honey.
In particular, aromas of date and dried apricots predominate.
On the palate, it is harmonious, smooth, velvety, has a good structure, and is pleasantly sweet.
