Soave Doc “Fontègo” – La Cappuccina
Vinification: Crafted from 90% Garganega and 10% Trebbiano di Soave, thriving in hillside vineyards with basaltic volcanic soil. The grapes are harvested at perfect ripeness and undergo a careful white vinification process, including destemming, gentle pressing, and separate skin maceration for each variety to extract rich aromas. The must ferments in stainless steel under controlled temperatures, followed by a minimum six-month ageing on its lees, resulting in a refined wine that beautifully expresses its unique terroir.
Tasting Note: It is deep yellow colour wine with a bouquet of jasmine, hawthorn, and acacia, enriched by citrus and hazelnut notes. The palate delivers a fresh, smooth elegance with a pronounced minerality, balanced fruitiness, and impressive length, creating a delightful complexity that some may find pleasantly mouth-puckering.
