Territory:
The vineyards are located in an exceptional area, 250 to 350 meters above sea level and equidistant from the sea and the Gran Sasso. The day-to-night temperature range of 13° to 14° Celsius thickens the grape skins, enhancing the wine’s aroma. The clayey limestone soil resembles Bordeaux, and a constant breeze throughout the year helps reduce humidity, keeping the vines dry. Only copper and sulfur treatments are used, following traditional winemaking methods.
Winemaking:
A harmonious blend of 60% Pecorino and 40% Passerina, harvested at peak ripeness in the first week of September. The winemaking process includes pressing, cryomaceration, and gentle soft pressing, preserving the unique characteristics of each grape. Spontaneous fermentation with natural yeasts adds remarkable depth and complexity. With an ageing potential of 2 to 3 years, this wine promises to develop even further, offering an exceptional experience in every sip.
Tasting Notes:
The wine is pale straw-yellow and displays great intensity on the nose. It reveals hints of white flowers, chamomile, anise, wild herbs, and a subtle note of toasted almond. Upon further smelling, fresh fruity nuances emerge, showcasing citrus aromas of pink grapefruit and a mineral quality reminiscent of gravel. On the palate, the wine offers a delightful tactile and gustatory experience. It is fresh, crisp, savoury, and mineral-driven, complemented by elegant citrus notes.
