Valpolicella Ripasso Doc Classico Superiore “Semonte Alto” – Venturini
Vinification: It is a distinguished Valpolicella Ripasso DOC, composed of 70% Corvina, 25% Rondinella, and 5% Molinara. Utilizing the ancient “Ripasso” method, the wine undergoes a second fermentation with the Amarone pomace, harnessing its sweetness for added depth. After an initial three-month resting period in stainless steel, it is re-fermented over the Amarone skins for ten days before aging in Slavonian oak barrels. The result is an intense, spicy wine that beautifully reflects the craftsmanship of its makers.
Tasting Note: A luminous ruby red colour wine and an enticing bouquet of spicy and toasted notes, evolving into dark fruit aromas of blackberries and blueberries, complemented by liquorice and faded violets. On the palate, it’s fresh, savoury, and taut, finishing with delightful tannins that refresh the palate, inviting you to savour another sip. A bold and energetic wine.
