Malvasia – Carso Doc – Castelvecchio

Vinification: The vinification process begins with a meticulous selection of Istrian Malvasia grapes, followed by gentle pressing to extract the juice. Fermentation occurs in stainless steel tanks at controlled temperatures, preserving the grape’s delicate aromas and flavours. After several months of aging in stainless steel, the wine is bottled and undergoes further maturation in the cellar, highlighting the varietal’s vibrant, fruity notes and distinct minerality influenced by the Karst terroir.

Tasting Note: It has intense straw yellow hue, accented by golden reflections. It offers an elegant bouquet of white flowers and ripe fruits like pear and apricot, complemented by hints of aromatic herbs. On the palate, it unfolds as fresh and lively, showcasing a delightful mineral character and a touch of spice, with a persistent, savoury finish that embodies the essence of its Karst terroir.
